4 cups whole-grain bread cubes
2 cups mushrooms, chopped
1 onion, diced
2 celery stalks, diced
2 cloves garlic, minced
1 cup low-sodium vegetable stock
2 tbsp olive oil
1 tsp fresh thyme
1 tsp fresh sage
Salt and pepper, to taste
Preheat your oven to 350°F (175°C).
Heat olive oil in a skillet over medium heat. Sauté onions, celery, and garlic until soft. Add mushrooms and cook until they release their moisture.
In a large bowl, toss the bread cubes with the sautéed vegetables and herbs. Add vegetable stock gradually until the mixture is moist but not soggy.
Transfer to a greased baking dish and bake for 25–30 minutes until golden on top.

Add the vegetable stock and herbs. Bring to a simmer for 15–20 minutes.
Use an immersion blender (or regular blender) to puree until smooth.
Taste and season with salt and pepper. Pour over turkey, stuffing, or roasted veggies.

1/4 cup maple syrup (or honey)
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
6 mini tart shells or muffin tins lined with parchment
1/4 cup almond milk (or any milk of choice)
Preheat your oven to 350°F (175°C).
In a bowl, mix pumpkin puree, maple syrup, almond milk, and spices until smooth.
Spoon mixture into tart shells or muffin tins.
Bake for 20–25 minutes, or until filling is set. Cool slightly before serving.
