Healthy Banana Bread
1/2 cup melted coconut oil
1/3 cup honey
1/4 cup milk or Greek yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas
1 3/4 cups whole wheat flour
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup dark chocolate chips, chopped walnuts, or raisins
The directions for this banana bread are quite simple! Preheat your oven to 325 degrees, and grease a loaf pan. Whisk together the flour, cinnamon, baking soda, and salt, in a medium bowl and set aside. In a separate bowl, beat eggs, oil, honey, milk, and vanilla, for two minutes. Stir in the mashed bananas, the flour mixture, and the dark chocolate chips. Pour the batter into the greased loaf pan, sprinkle the top with cinnamon, and bake for about 50-55 minutes, or until a toothpick inserted comes out clean. Cool for 10 minutes.
