Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix almond flour, coconut flour, baking soda, salt, ginger, and cinnamon.
In another bowl, whisk together coconut oil, honey, egg, and vanilla.
Combine the wet and dry ingredients, stirring until a dough forms.
Roll out the dough between two sheets of parchment paper and cut into shapes.
Place on the baking sheet and bake for 8-10 minutes or until golden.
