    Almond Flour Gingerbread Cookies


    Ingredients:

    • 2 cups almond flour

    • 1/4 cup coconut flour

    • 1 tsp ground ginger

    • 1 tsp cinnamon

    • 1/2 tsp baking soda

    • 1/4 tsp salt

    • 1/4 cup coconut oil (melted)

    • 1/4 cup honey or maple syrup

    • 1 egg

    • 1 tsp vanilla extract


    Instructions:

    1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2. In a bowl, mix almond flour, coconut flour, baking soda, salt, ginger, and cinnamon.

    3. In another bowl, whisk together coconut oil, honey, egg, and vanilla.

    4. Combine the wet and dry ingredients, stirring until a dough forms.

    5. Roll out the dough between two sheets of parchment paper and cut into shapes.

    6. Place on the baking sheet and bake for 8-10 minutes or until golden.

    7. Let them cool, and enjoy these healthier gingerbread cookies!

      Coconut Flour Sugar Cookies


      Ingredients:

      • 1 1/2 cups coconut flour

      • 1/4 tsp baking soda

      • 1/4 tsp salt

      • 1/4 cup coconut oil (melted)

      • 1/4 cup honey or maple syrup

      • 1 egg

      • 1 tsp vanilla extract

      • Extra coconut sugar for rolling


      Instructions:

      1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

      2. In a bowl, combine coconut flour, baking soda, and salt.

      3. In a separate bowl, whisk together coconut oil, honey, egg, and vanilla.

      4. Add the wet ingredients to the dry ingredients, stirring to form a dough.

      5. Roll the dough into balls and dip them in coconut sugar before placing them on the baking sheet.

      6. Flatten with a fork and bake for 8-10 minutes until golden.

      Healthier Icing


      Ingredients:

      • 1 cup powdered erythritol or powdered stevia (or powdered sugar if you prefer)

      • 1-2 tablespoons almond milk (or milk of choice)

      • 1/2 tsp vanilla extract

      • A pinch of salt (optional, but helps balance the sweetness)


      Instructions:

      1. In a bowl, mix the powdered erythritol or stevia with vanilla extract and a pinch of salt (if using).

      2. Add almond milk (or your milk of choice) a little at a time, stirring until you reach the desired consistency. If you want thicker icing, add less milk; for thinner icing, add more.

      3. Once the icing is smooth, you can use it immediately to decorate your cookies.

      4. If you want colored icing, just add a few drops of natural food coloring or beet juice for a festive touch!

        Dark Chocolate Almond Bites


        Ingredients:

        • 1 cup almond butter

        • 1/4 cup coconut oil (melted)

        • 2 tbsp honey or maple syrup

        • 1/2 tsp vanilla extract

        • 1/4 tsp sea salt

        • 1/2 cup dark chocolate chips (70% cacao or higher)


        Instructions:

        1. In a bowl, mix together almond butter, melted coconut oil, honey, vanilla, and sea salt.

        2. Roll the mixture into small balls and place them on a parchment-lined baking sheet.

        3. Freeze for 30 minutes until firm.

        4. Meanwhile, melt the dark chocolate chips in a double boiler or microwave.

        5. Once the almond balls are firm, dip each one into the melted chocolate and return them to the baking sheet.

        6. Freeze again until the chocolate is set.

        7. Enjoy a decadent yet healthy treat that’s perfect for the holidays!

          Instructions:

          3. Add in the oats, flaxseeds (or chia), vanilla, and baking soda, stirring until mixed.
