3 Easy and Delicious Easter Desserts

Easter is all about indulging in sweets! If you're planning to up your game this Easter, we have some recipes for you. Below are three yummy Easter desserts that everyone can enjoy. These recipes all take under an hour to make, so if you're in a hurry, or just want to make an easy treat, we have you covered!

1. Mini Easter Cheesecakes

Ingredients:
2 packages cream cheese
1/2 cup sugar
1/2 teaspoon vanilla
2 eggs
12 vanilla wafer cookies
jelly beans for decoration

Instructions: 
1. Preheat oven to 350 degrees. Beat cream cheese, sugar, and vanilla in a large bowl with an electric mixer on medium speed until well blended. 
2. Add eggs, and mix on low speed until blended
3. Place a wafer at the bottom of each 12 paper lined muffin cups. Spoon the cream cheese mixture evenly over wafers
4. Bake for 20 minutes, or until the centers are almost set. Cool to room temperature and refrigerate
5. Add decorations as desired

2. Easter Egg Blondies

Ingredients:
1/2 cup unsalted butter 
1 large egg
1 cup light brown sugar
1 tablespoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1 cup M&M's

Instructions: 
1. Preheat oven to 350 degrees. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray, and set aside
2. In a large microwave-safe bowl, add the butter and heat to melt for about 1 minute
3. Wait momentarily before adding the eggs so you don't scramble them. Add the egg, brown sugar, vanilla, and whisk until smooth 
4. Add the flour and salt, and stir until just combined
5. Add 3/4 cup M&M's and stir to combine
6. Spread batter onto prepared pan, smoothing the top slightly with a spatula
7. Evenly add the remaining 1/4 cup M&M'S over the top
8. Bake for about 20 minutes, or until top is set in the center and done
9. Cool for about 30 minutes before slicing and serving

3. Rice Krispie Easter Basket

Ingredients:

3 tablespoons butter
5 1/2 cups miniature marshmallows
6 cups Rice Krispies® cereal 
3/4 cup coconut
green food coloring
jelly beans
mini egg candy

Instructions: 
1. Place coconut in mixing bowl and add a few drops of green food coloring
2. Stir until color is evenly distributed
3. In a separate microwave safe bowl, melt butter
4. Add marshmallows and toss to coat
5. Microwave for about 45 seconds and stir, then microwave in additional 45 second increments until the marshmallows are melted
